Grilled salmon with tzatziki

Ingredients
• 1 pound salmon, skin on
• 150g tub greek yogurt
• fresh dill, minced
• cucumber, peeled and diced
• juice of 1 lemon
• salt, cumin if desired

For the tzatziki:
• In a small bowl, mix yogurt, dill, lemon juice, and cucumber. Season to taste with a little salt and/or cumin

For the salmon:
• preheat over to 400° (204° celsius)
• season the skin side liberally with salt. Season the flesh side with salt and dill.
• Heat 1 T oil in an ovenproof skillet at medium high heat. Sear the salmon skin till crispy - don't burn it!
• transfer the skillet to the oven and roast until salmon is cooked through - don't overcook!
• remove skillet from oven and flip salmon over to briefly sear the flesh side for color.
• transfer to a plate and serve immediately with the tzatziki to spoon over top

You're very welcome! I'll post more as I go along. I am very serious cook so I will need to experiment to keep flavor and interest in our diet as we go along. I could eat this one every day though. Yummmmmm
