Consolidation Phase - What kind of cheese?

I only had a small amount of weight to loose, so I didn't buy the book. Instead I gleaned all I can about the diet from online. I'm looking to start the 3rd stage of the diet where I am allowed to eat a small amount of cheese a day. Can someone give me some more specifics on what kind of cheese I can eat. It says hard cheese, but what sort of cheeses does that include? Is there a certain type I should be looking for? Or any cheese with a specific percentage of fat?

Any help would be appreciated!
